Ingredients
  

  • 1 medium eggplant sliced into rounds
  • 100 g all-purpose flour
  • 2 large eggs
  • 200 g bread crumbs preferably whole wheat
  • 400 g marinara sauce
  • 200 g mozzarella cheese shredded
  • 50 g parmesan cheese grated
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt to taste
  • 1 teaspoon pepper to taste
  • 2 tablespoons olive oil for drizzling

Method
 

  1. Preheat the air fryer to 200°C.
  2. Dust eggplant slices with flour, dip in beaten eggs, then coat with bread crumbs mixed with Italian seasoning, salt, and pepper.
  3. Arrange the breaded eggplant in the air fryer basket in a single layer. Drizzle with olive oil.
  4. Air fry for 12 minutes, flipping halfway through until golden brown.
  5. In a baking dish, layer marinara sauce, fried eggplant, mozzarella, and parmesan cheese. Repeat layers ending with cheese on top.
  6. Air fry again for an additional 8 minutes until cheese is bubbly and golden.
  7. Let cool for a few minutes before serving.

Notes

Tip: For an extra crunch, you can double coat the eggplant by dipping it in egg a second time before the breadcrumbs.
