Method
- Preheat the air fryer to 180°C.
- In a bowl, mix the ground pork, Dijon mustard, garlic powder, onion powder, salt, and black pepper until well combined.
- Divide the pork mixture into 6 equal portions and flatten each portion in your hand.
- Place a hard-boiled egg in the center of each portion and wrap the pork mixture around it, shaping it into a ball.
- Roll each Scotch egg in almond flour to coat.
- Spray the air fryer basket with olive oil and place the Scotch eggs inside, making sure they’re not touching.
- Cook for 20 minutes or until golden brown and cooked through. Turn halfway for even cooking.
Notes
Tip: For extra flavor, add some herbs like thyme or parsley to the pork mixture.
