Air Fryer Keto Scotch Eggs

Ingredients
  

  • 6 eggs hard-boiled and peeled
  • 450 g ground pork
  • 50 g almond flour for coating
  • 2 tsp Dijon mustard
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp olive oil for spraying

Method
 

  1. Preheat the air fryer to 180°C.
  2. In a bowl, mix the ground pork, Dijon mustard, garlic powder, onion powder, salt, and black pepper until well combined.
  3. Divide the pork mixture into 6 equal portions and flatten each portion in your hand.
  4. Place a hard-boiled egg in the center of each portion and wrap the pork mixture around it, shaping it into a ball.
  5. Roll each Scotch egg in almond flour to coat.
  6. Spray the air fryer basket with olive oil and place the Scotch eggs inside, making sure they’re not touching.
  7. Cook for 20 minutes or until golden brown and cooked through. Turn halfway for even cooking.

Notes

Tip: For extra flavor, add some herbs like thyme or parsley to the pork mixture.
