- In a bowl, combine diced peaches, granulated sugar, cinnamon, cornstarch, melted butter, and vanilla extract. Mix well to coat the peaches.
- Lay an egg roll wrapper on a flat surface, place a couple of tablespoons of the peach mixture in the center, and roll it up tightly, sealing the edges with a little water.
- Repeat the process with the remaining wrappers, then spray each egg roll lightly with cooking spray.
- Preheat the Air fryer to 180°C (360°F).
- Place the egg rolls in the Air fryer basket, ensuring they are not overcrowded. Cook for about 10 minutes, shaking the basket halfway through.
- Once golden and crispy, remove them from the basket and let cool slightly before serving.

Tip: Try serving with a scoop of vanilla ice cream for an extra special treat!
