Air Fryer Peach Cobbler Egg Rolls

Nothing says summer quite like peach cobbler, and these Air Fryer Peach Cobbler Egg Rolls are a fun, easy twist on a classic! Perfectly crispy on the outside and bursting with sweet peach filling, they're sure to be a family favorite.

Ingredients
  

  • 6 egg roll wrappers
  • 2 medium ripe peaches peeled and diced
  • 50 g granulated sugar
  • 1 tsp cinnamon
  • 1 tbsp cornstarch
  • 1 tbsp butter melted
  • 1 tbsp vanilla extract
  • cooking spray for spraying

Method
 

  1. In a bowl, combine diced peaches, granulated sugar, cinnamon, cornstarch, melted butter, and vanilla extract. Mix well to coat the peaches.
  2. Lay an egg roll wrapper on a flat surface, place a couple of tablespoons of the peach mixture in the center, and roll it up tightly, sealing the edges with a little water.
  3. Repeat the process with the remaining wrappers, then spray each egg roll lightly with cooking spray.
  4. Preheat the Air fryer to 180°C (360°F).
  5. Place the egg rolls in the Air fryer basket, ensuring they are not overcrowded. Cook for about 10 minutes, shaking the basket halfway through.
  6. Once golden and crispy, remove them from the basket and let cool slightly before serving.

Tip: Try serving with a scoop of vanilla ice cream for an extra special treat!
