Ingredients
  

  • 500 g potatoes peeled and grated
  • 1 large onion finely chopped
  • 2 large eggs
  • 70 g all-purpose flour
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tbsp olive oil for cooking

Method
 

  1. In a large bowl, combine grated potatoes, chopped onion, eggs, flour, salt, and pepper.
  2. Mix everything together until well combined.
  3. Preheat the air fryer to 200°C.
  4. Scoop about 1/4 cup of the mixture and form it into a pancake shape.
  5. Brush the air fryer basket with olive oil and place the pancakes in a single layer, making sure they are not overcrowded.
  6. Cook for about 12 minutes, flipping halfway through, until golden brown and crispy.
  7. Remove from the air fryer and repeat with the remaining mixture.
  8. Serve warm with your favorite dipping sauce!

Tip: For extra flavor, try adding fresh herbs like chives or parsley to the mixture!
