- In a large bowl, combine grated potatoes, chopped onion, eggs, flour, salt, and pepper.
- Mix everything together until well combined.
- Preheat the air fryer to 200°C.
- Scoop about 1/4 cup of the mixture and form it into a pancake shape.
- Brush the air fryer basket with olive oil and place the pancakes in a single layer, making sure they are not overcrowded.
- Cook for about 12 minutes, flipping halfway through, until golden brown and crispy.
- Remove from the air fryer and repeat with the remaining mixture.
- Serve warm with your favorite dipping sauce!
