Method
- Preheat your Air Fryer to 200°C.
- Cut the potatoes in half lengthwise and scoop out the insides, leaving about 1 cm of flesh.
- Brush the potato skins with olive oil, and season with salt and pepper.
- Place the skins in the Air Fryer basket and cook for 10 minutes.
- Remove the skins, fill them with cheddar cheese and bacon, and return to the Air Fryer for another 5-10 minutes until the cheese melts and the skins are crispy.
- Serve hot with sour cream and sprinkle with chopped chives.
Notes
Tip: For extra crunch, you can air fry the skins for a few more minutes before adding the toppings!
