Ingredients
  

  • 4 medium potatoes washed and scrubbed
  • 2 tablespoons olive oil
  • 1 cup cheddar cheese shredded
  • 100 g bacon cooked and crumbled
  • 2 tablespoons sour cream for serving
  • 2 tablespoons chives chopped, for garnish

Method
 

  1. Preheat your Air Fryer to 200°C.
  2. Cut the potatoes in half lengthwise and scoop out the insides, leaving about 1 cm of flesh.
  3. Brush the potato skins with olive oil, and season with salt and pepper.
  4. Place the skins in the Air Fryer basket and cook for 10 minutes.
  5. Remove the skins, fill them with cheddar cheese and bacon, and return to the Air Fryer for another 5-10 minutes until the cheese melts and the skins are crispy.
  6. Serve hot with sour cream and sprinkle with chopped chives.

Notes

Tip: For extra crunch, you can air fry the skins for a few more minutes before adding the toppings!
