- In a skillet over medium heat, cook the ground beef with the onion and garlic until browned. Drain any excess fat.
- Add taco seasoning, salt, and pepper to the meat mixture. Stir in black beans and half of the cheese, cooking until heated through.
- Place an egg roll wrapper on a clean surface. Add a few tablespoons of the meat mixture and sprinkle with cheese. Roll tightly, sealing the edges with beaten egg.
- Brush the outside of the egg rolls with olive oil and place them in the air fryer basket in a single layer.
- Air fry at 180°C for about 10 minutes, flipping halfway through until golden and crispy.
- Serve warm with your favorite dipping sauce.
Notes
Tip: For an extra kick, add some chopped jalapeños to the filling!
