Air Fryer Twice Baked Potatoes

Ingredients
  

  • 4 large potatoes russet or Idaho
  • 150 g cheddar cheese shredded
  • 100 g sour cream
  • 4 tablespoons butter melted
  • 1 teaspoon garlic powder
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 2 tablespoons chives chopped, optional for garnish

Method
 

  1. Wash the potatoes thoroughly and poke holes in them with a fork.
  2. Coat the potatoes with olive oil and season with salt.
  3. Place the potatoes in the air fryer basket and cook at 200°C for 25 minutes or until tender.
  4. Remove the potatoes and let them cool slightly. Cut them in half lengthwise and scoop out the insides into a bowl, leaving a bit of potato on the skin.
  5. Add butter, sour cream, garlic powder, salt, and black pepper to the potato flesh and mash until smooth.
  6. Stir in the cheddar cheese until well combined.
  7. Fill the potato skins with the mixture and sprinkle additional cheese on top.
  8. Return the filled potatoes to the air fryer and cook at 180°C for an additional 10 minutes or until heated through and crispy.
  9. Garnish with chives before serving.

Notes

Tip: For an extra cheesy top, broil the potatoes for an additional 2 minutes at the end!
