Method
- Wash the potatoes thoroughly and poke holes in them with a fork.
- Coat the potatoes with olive oil and season with salt.
- Place the potatoes in the air fryer basket and cook at 200°C for 25 minutes or until tender.
- Remove the potatoes and let them cool slightly. Cut them in half lengthwise and scoop out the insides into a bowl, leaving a bit of potato on the skin.
- Add butter, sour cream, garlic powder, salt, and black pepper to the potato flesh and mash until smooth.
- Stir in the cheddar cheese until well combined.
- Fill the potato skins with the mixture and sprinkle additional cheese on top.
- Return the filled potatoes to the air fryer and cook at 180°C for an additional 10 minutes or until heated through and crispy.
- Garnish with chives before serving.
Notes
Tip: For an extra cheesy top, broil the potatoes for an additional 2 minutes at the end!
